This one was another winner. They were easy to make and better and cheaper than the store energy bars (that Will likes to eat). I liked that they were loaded with nuts and seeds and dried fruit.

2 cups old-fashioned rolled oats
1 cup unsweetened shredded coconut
(I just bought regular)
1/2 cup whole raw almonds
(I bought salted)
1/2 cup whole raw cashews or peanuts
(again I bought salted...I shop at aldi I get what they have)
1/2 cup sesame seeds
1/2 cup raw sunflower seeds (I used salted)
1/2 cup chopped dates or raisins (I used raisins)
1 1/2 cups tahini or peanut butter (I used PB)
1 cup honey (that a lot of honey!)
1 t vanilla extract
In a large bowl combine the oats, coconut, almonds, cashews or peanuts, sesame seeds, sunflower seeds, and dates or raisins. Combine the peanut butter or tahini and honey and microwave 1 minute. Add vanilla and mix well. add to the oat mixture. Stir. Pour into a greased 10x15 baking sheet and pat into a rectangle about 1" high. Bake 15 minutes at 350 until edges turn brown. do not overbake, the bars will feel tacky in the center but will firm up as they cool.
