New Recipes # 2: Steel cut cocoa oatmeal.....fail


Ok so recipe number two was kind of disappointing.  It wasn't bad it just wasn't good either. It was just kinda blah.  It was chocked full of good ingredients and I know I didn't leave anything out but it just didn't really have much flavor.  So in the spirit of blogging about the good and the bad here is the recipe (also I went back and update the granola blog to have the recipe).  Maybe you will find a way to make this taste better than I did, if so let me know where I went wrong.  Also it made a lot and the boys didn't want to have anything to do with it.  So I ate if for the rest of the week every morning.




CREAMY COCOA OATMEAL
1 1/2 cups steel cut oats
2 cups water
2 cups low fat milk
2 T maple syrup
1 mashed banana
3 T ground flaxseed
2 T unsweetened cocoa powder
1 t ground cinnamon
1/4 t ground nutmeg
1/3 cup finely chopped walnuts
1/3 cup dried tart cherries


In a large saucepan, combine the oats, water, and milk.  Bring to a boil.  Reduce heat to low and simmer for 15 minutes.  Stir in the syrup, banana, flaxseed, cocoa, cinnamon, and nutmeg.  Simmer 10 minutes, stirring occasionally.  Stir in the walnuts and cherries.

I wanted to surprise Will after his first night on the new night shift and have this waiting for him when he got home from work.  I was a little behind schedule but a very sleepy Will waited for me to finish.  Then it was so disappointing that it wasn't very good.  I got up early, Will stayed up when he would rather have been asleep and then it tasted blah, at least it was good for us.  Oh well its the thought that counts, I guess....
