These were also a really easy to whip up yummy energy bars. We all liked it, and maybe even a little more than the coconut energy bars although they had completely different tastes so its hard to compare.
Banana-oat energy bars: from the runners world cookbook
2 very overripe bananas
1/2 cup vegetable oil
1 cup sugar
1/2 t vanilla
1 1/2 cup old-fashioned oats
3/4 cup flour (can use up to half wheat flour, which I did)
3/4 t baking powder
1/2 t cinnamon
1/2 t nutmeg
1/4 t baking soda
3/4 cup dried canberries (I used a mixed dried fruit bag I had)
First spread the walnuts on a baking sheet and toast in the oven for 5-8 minutes at 350. Meanwhile mash the bananas in a medium mixing bowl. add the oil, sugar, vanilla. mix until smooth.
In a large bowl combine oats, flour, baking powder, salt, cinnamon, nutmeg, and baking soda. Add banana mixture and stir just until combined. Fold in walnuts and cranberries.
Pour the mixture into a prepared 8x8 pan. Bake 350 25-30 minutes, or until the top is browned and a toothpick comes out nearly clean. allow to cool before cutting (otherwise the will fall apart...trust me).
