Soups on

Here is a quick, easy, and really good soup recipe I want to share. My mom gave me this recipe and I have made it 2 times already this winter. Most recently for Christmas Eve dinner with the Rowland family. (it really hit the spot since we were having a blizzard outside!)

Taco Chili

Ingredients:
1lb ground beef
1 onion, chopped
1 package ranch style dressing mix
1 package taco seasoning mix
1 cup water
2-14.5 oz cans diced tomatoes w/ green chilies (you decide the "hotness")
2-15oz cans pinto beans
1-15 oz can black beans
1-15 oz can creamed corn

Directions:
Brown Beef with onions in a medium size soup pot. Drain excess grease. Add remaining ingredients and simmer for 20 minutes before serving.

Good servied with tortilla chips or corn bread, sour cream, green onions, and shredded cheddar cheese.

Here are some pics and personal tips:

One thing I like about this recipe is that you can buy almost all your ingredients at Aldi's! I think the only thing they dont have is the ranch mix, and I choose not to buy my meat there. Even if you choose to shop at some high dollar grocery store like Dillons or Dierburgs it is still a fairly inexpensive recipe

I pour all the bean cans into a strainer and then rinse them really good before adding them to the soup. (have you seen what is in the bottom of those bean cans! yuck!)

Just dump it all in and then mix it up and let it heat.............how easy!

I meant to take more pictures when I made this because I did have all the suggested sides and even made corn bread. But sometimes when you are hosting a dinner for 10 people you dont have time to take pictures! Maybe next time.
Hope you enjoy!
