Runners World Recipe Review # 7



I went back and looked and this is my 7th recipe review from my Runners World Cookbook and most of those have had multiple recipes reviewed.  And Im not done yet there are still more recipes I would like to make out of it.  Here are 4 more to share.  Two were hit it out of the park awesome, one good, and the other fun to try once but probably wont make again.  I think I will just put up pics and give our opinions, if someone really wants a recipe let me know.

Basil-Mint Pesto:


This was my first time ever to make pesto....I think I need a better food processor after I blended this it still seemed chunky so I then put it in the blender and blended even more and I still think it could have been smoother if say I had a vitamix.

I mostly wanted to try this recipe because I had the basil and the mint growing in my garden.  It was pretty easy to make but it turned out to be just ok.  It was a bit spicier than I really care for.  Not really hot spicy but just kinda zippy.  I dont know really how to explain it.  Maybe kinda like pepper kinda spicy.  I had it the next day for leftovers and actually liked it a little better.  It only made 3 servings so we didn't have it around for too long.  I guess I would maybe like to try a professionally made pesto to get a better idea if I like it and how it compares to what I made.  



Recipe 2:


Marinated Grilled Chicken:

This recipe was YUM-EE.  We will definitely be making it again.  I basically just marinated the chicken in a soy sauce, lime juice, EVOO, and thyme (from the garden) mixture.  Then Grill.  It was really juicy and flavorful.  We will make this again and next time we will make more!

RECIPE 3:

Roasted Sweet Potato Wedges

Ok so again, hit it out of the ball park big winner de-lic-e-o-so.  We really like sweet potatoes.  I make sweet potato bean burritoes and sweet potato chicken so sweet potatoe wedges wasn't too big of a gamble.  They were made with EVOO, salt, paprika, and rosemary (from my garden).  The best part was the boys really liked them too.  I think Grant ate like half of them.








Recipe 4:

Grilled Beef Fajitas


We have a lot of steak at our disposal (one of the perks of marrying the son of a beef farmer) so I am always looking for different ways/recipes for beef.  This recipe called for flank steak.  Im not really even sure what that is but we have sirloin so that is what I used.  I basically just made a marinade for the steak with cilantro, lime, cumin, garlic, and paprika.  Then we grilled it and sliced it thin.  


meanwhile I grilled up some onions and peppers in some evoo, and diced up some tomatoes (from the garden) and avocado for toppings.  


I even bought corn tortillas because that was what the recipe called for however I dont think im a big fan of corn tortillas.  They kinda tasted like cardboard.  So we switched over to flour and it was pretty good.  It made a lot so I have been eating for lunch many days.  The boys both ate the steak and nibbled on tortillas.
Someone was hoping I would drop some steak....a few fatty pieces may have ended up dropping.
