Wildtree: Easy Breezy Slow Cooker Workshop Review (Part 2)


I'll pick up where I left off and review the last 5 meals of the Easy Breezy workshop.  Just a reminder:

I'm rating it on a 5 star rating system.   1-yuck never again.  2-OK for 1 meal but probably won't make again, 3-above average good eats, 4-delicious we all loved it and will definitely make again.  And a 5 Star rating to ones that we just Loved and are new family favorites. Please leave a comment and let me know what sounded good.

Chipotle Citrus Chicken:

We all really enjoyed the chicken.  It was juicy, flavorful, and very tender.  I also made the suggested Fruit Salsa.  Will and I really enjoyed it with the chicken.....and then again later that evening with tortilla chips.  

Italian Beef Sandwich (with Garlic Aioli)

I've been a fan of Italian Beef every since somebody brought us an Italian Beef meal after I had Grant.  I've made that recipe  quite a bit over the years and tried 1 or 2 others.  Having said all that this may be my new favorite Italian Beef meal. The meat we very tender, and I really liked the flavoring and the peppers and onions that had cooked in with the meal were delicious.  What I think really set it off though was the Garlic Aioli spread.  That stuff is good!  I only made 1/2 of what the recipe called for cause I knew Will and I would be the only ones eating it.  We still had a little left over when all the meat was gone and so we used it to dip chips in.  Yummy!  I will definately be making this one again!




Pork and Pineapple Rice Bowls:

This was really quite similar in flavors to the Hawaiian Meatballs I made previously.   However I preferred this meal with the pulled pork over the meatballs.  The boys liked the meat and rice, but didn't want any pineapple (cause they looked wierd).  After 13 years of marriage I'm still learning new things about my beloved.  So after getting a "it was OK" review from him, I interrogated him a bit and learned he is not a fan of pineapples in meals.  (fruit salad-0k, pork-not so much).  So once again there are quite a lot of left overs I'll be working on for many days worth of lunches.

I have to say I kept intentionally putting this meal off till the end.  I kept seeing the Salad part of it and would instantly rule it out as a quick easy dinner option.  The boys are pretty good to try all the Wildtree meals but I knew there was NO way I was getting them to try out a spinach salad meal, and I didn't want to have to make a parent meal and a kid meal so I just kept putting it off.  Since it was the last one I figured I'd work it into the meal schedule somehow this week and reluctantly thawed it out.  Then when I was making my grocery list I started reading all the other ingredients I needed to get to make it and I started getting kinda excited about it.  Yellow Peppers-okay, Apples-I love apples in salads, bacon- double yum! Then Will was off this Friday and both boys were at school and I was like "Hey!  I could make it for us for lunch....I'm a Genius!"  It was super easy to throw it in the crockpot in the morning when I was making breakfast for everyone and it was ready right on time for lunch and.......it was really good!  Will and I both enjoyed it and there was lots of chicken (and all the toppings left)  and now that they are all chopped it will be easy to throw them together and make this salad a few more times in the days to come! 

WOW, this Easy Breezy Slow Cooker workshop has had SO many good meals in it!  I have actually already ordered a few of the bbq sauces and seasonings so I can remake some of our favorites.  What meals looked/sounded the best to you?
